Grams by scales or by the bamboo chashaku scoop: one scoop ≈ 1 g. Matcha is a suspension rather than an infusion — it settles, so it is drunk at once.
What is normally served as matcha is usucha, "thin tea": two grams to sixty millilitres. Koicha, "thick tea", takes twice the powder in half the water — four times the density in the same bowl.
That is why it is not whisked to a foam but kneaded slowly into a bubble-free paste and drunk in a few sips, the bowl passed around. Koicha, not usucha, sits at the centre of the Japanese tea ceremony.
It is also why only the most expensive powder goes into it: at that density the bitterness of cheap leaf becomes unbearable, whereas in a latte the milk hides it.
Why the numbers can be trusted.
