Both sheets answer the same kind of question: how much of something is really in the food, once you stop comparing per hundred grams and start comparing portions anyone would actually put on a plate.

The fruit sheet sets sugar side by side and makes the point that sugar is not one substance — fructose, glucose and sucrose come in different proportions in each fruit, and the tongue can tell. The protein sheet does the same for protein, including why cooked and raw figures disagree: the protein does not go anywhere, the water does.
